Horseradish

Description

Long, white, tapering root produces a 2-3 foot high stem in the 2nd year. It has abundant leaves that are long stalked and oblong toward the root and smaller, lanceolate and short stalked near the top. Flowers are small and white with terminal racemes from the leaf axils.




Common Uses

When taken regularly, horseradish can help build up resistance to coughs and colds. It is also able to help reduce bronchial complaints and relieve sinus pain. It is richer in vitamin C than orange or lemon.




History

Horseradish, though long used as a condiment by Germans, didn't become acceptable to use in England until the 1600s, and then it was only for laborers and the unrefined. According to John Parkinson, an herbalist of the day, it was "too strong for tender and gentle stomachs."
