Description

Deep rooted, bristly stemmed perennial that produces sky blue, dandelion-like flowers atop tall stems. The leaves are raggedly indented oblongs. Height: 3-5 feet. It produces hard, brownish, oval seeds 1/10 of an inch long.




Common Uses

Chicory is a bitter tonic for the liver and digestive tract. It is recommended for loss of appetite and dyspepsia. Chicory root cleanses the urinary tract. It is also taken for rheumatic conditions and gout. The root has also been found to significantly lower cholesterol and blood sugar levels.




History

Chicory is often used to flavor coffees, but it caused a political scandal in 1809 when it was discovered that President Jefferson bought chicory seeds from England, which was viewed as America's enemy.
