Cayenne

Family:
Solanaceae
Latin Name:
Capsicum annuum

Description

Shrubby, tropical perennial with hardwood stems and branches. It produces greenish or yellowish white star-like flowers that droop from long stems. The fruit are shiny, pod-like, and leathery, ranging in color from yellow to orange to red. Blooms in summer.

Common Uses

A rich source of antioxidants, cayenne contains vitamins A, C, and E to help protect the body against harmful free radicals. Preliminary studies show that cayenne may help protect against heart disease and that it reduces harmful LDL cholesterol levels. Studies have also shown that it reduces fat deposits in the arteries by increasing the levels of liver enzymes involved in breaking down fats, thereby improving artery health.

History

There was no word for this spice in ancient Chinese, Latin, Sanskrit, Greek, or Hebrew, and its first appearance in writing was in 1493, when Peter Martyn chronicled its arrival in Italy from the New World.
